I've been slowly working my way through my new cookbook, which I've been raving about for a few weeks now because I love it so much.

all the tiny flags, waiting to be made.

I find with most of my cookbooks, there's one or two recipes that really catch your eye and then the rest, you have the intent on making them, but then they're either too difficult or you don't have the right ingredients or you just get lazy.

I haven't gotten to that feeling yet with this cookbook. I feel like I'm selling this cookbook left, right and center, but honestly, it's fantastic.  It's everyday food, literally.

If you haven't noticed, I've been on a peanut kick.

I love peanut butter.

I eat it off a spoon. Straight from the jar.

The amount of peanut related items on my blog right now is ridiculous. The good kind of ridiculous.

I've been meaning to get to my March baker's dozen challenge and I keep getting sucked back in by peanut related recipes, surprise parties and sangria.

Dear computer,

You've been a lovely member of our family for 6 years now and we've enjoyed ever moment of it.

I've made sure you've been bright white, with a clean keyboard. Made sure your mouse didn't become a cat toy, given you a #keslerbomb photo as a desktop, you know to keep up with the trends.

I organize my photos in neat little folders, I even edit them! I've given you lots of lovely programs and made sure you weren't left on for days at a time. And when we bought you a brand new wireless printer, we thought you'd be appreciative that we no longer need one of your precious USB ports.

But this week you let me down. Big time.

Well, hello.

You look lovely today. That shade of green does wonders for your skin. Very festive, very Irish.

Me? I'm wearing brown and tans. I have no green clothing (other than a super cute jacket) so I've decided I'm still participating, but instead of sporting around like a leprechaun, I'm going as an Irish potato.

Oh yeah, round and brown is the look I'm going for. Although, I still need to work on the roundness....

To help, I give you peanut butter cups.

These take under 45 minutes to make, most of that time is for chilling, use no heavy duty appliances. Just a microwave and a couple glass bowls.

They are rich, chocolaty and peanuty all in a couple of bites. A single bite if you don't want to talk to anyone. They give the well known version of a peanut butter cup, a run for it's money.

I'm thinking you could even swap out the semisweet chocolate for a green baking chocolate. But only if you're feeling up to it. I'm sticking with the browns.

    Easy peanut butter cups

    Makes 24 cups.

    4 ounces white chocolate, chopped
    1/2 cup smooth peanut butter
    12 ounces semisweet chocolate, chopped
    2 tablespoons unsalted roasted peanuts, finely chopped

    Line a mini muffin tins with paper liners, set aside.

    In a large microwave safe bowl, combine peanut butter and white chocolate, microwave on high for 1 - 1 1/2 minutes, or until almost completely melted, stirring halfway through. Set aside.

    In another large microwave safe bowl, add semisweet chocolate and microwave, on high for 2 - 3 minutes, stirring halfway through, until almost completely melted.

    Using a spoon or if you were smart enough to use a bowl with a lip, pour peanut butter mixture and chocolate mixture into prepared muffin tins, starting and ending with the semisweet chocolate. Sprinkle with chopped peanuts.

    Place muffin pan in freezer until peanut butter cups are firm, about 15 - 20 minutes. Let come to room temperature before serving or risk a broken tooth.

    Store any extras in the refrigerator.

    I like alot of things. Generally a pretty happy go lucky kind of gal.

    I like cats. Duh. Especially box cat.

    I like sunny days, warm or cold. The rain and my hair aren't friends.

    I have Chris Brown and Rihanna songs on my current ipod play list, I feel ashamed of this. Like I should choose sides.

    Lately, I have an unnatural obsession with cardigan sweaters.
