Have you ever had a hankering for a little something chocolaty?

I'm sure you have. Sometimes you just can't wait until a batch of cookies, brownies, cupcakes or a full cake is prepped, baked and cooled. Sometimes you need it now. Like right now.


My husband is one of those people. Most days, I make a home cooked meal and IMMEDIATELY afterwards, he proclaims he's still hungry. Do you know how frustrating that is ? I take the time and make a wonderful meal, which he eats, then right after eats a bag of microwave popcorn.

I know he doesn't mean it in a malicious sense, I think he's just hungry. Since we've been together since the beginning of time (or at least it feels that way), he's now making an effort to not eat everything in our kitchen cupboards between the hours of 7 pm and 3 am. I also have been helping him by making this chocolate cake to curb his cravings.

This cake is the easiest dessert you can whip up in less than 5 minutes. The original recipe calls for it to be made in a mug but I have these cute little casserole dishes from Ikea that I make it in. Mostly because the mouth is wider on the dishes and it makes it easier to stir.



3 minute chocolate cake

Feeds one hungry husband or two regularly hungry people.

4 tablespoons all purpose flour
4 tablespoons brown sugar
3 tablespoons dutch process cocoa
1/2 teaspoon baking powder
1/2 teaspoon vanilla
1 egg
2 tablespoons water or milk
2 tablespoons canola oil
a handful of chocolate chips

In a coffee mug or small casserole dish, combine the flour, sugar, cocoa and baking powder, Stir to combine.
Add vanilla, egg, water or milk and oil, mix to combine.
Note: I mix the cake with a fork, seems to work the best to get all the flour-y bits off the bottom. No one like chunks of raw flour in their cake.
Fold in chocolate chips.
Place dish or mug on a plate and place in microwave. Microwave for 3 minutes at high.

Let rest for a minute or so otherwise you'll burn your mouth.
